| Pork tenderloin | ¾ pound |
| Juice of 1 lime |
| Olive oil | 2 teaspoons |
| Ground cumin | 1 tablespoon |
| Ground coriander | 1 teaspoon |
| Salt | ¼ teaspoon |
| Freshly ground pepper to taste |
- Directions
- Preheat oven to 500ºF.
- Rub the pork with the lime juice, and then drizzle with the oil. Season all sides of the pork with the cumin, coriander, salt, and pepper.
- Roast pork in center of oven for 20 minutes. Remove the pork, tent it with foil, and let it rest 10 minutes before serving.
